Baklava sa orasima na sarajevski način
Dobrodošli u svet Gastrotomije!
Značajno mesto u Gastrotomiji zauzima svet Baklava. Ovo je prvi recept iz tog serijala. Do sada sam baklavu sa orasima napravio na oko 20 načina. Želim da svoja iskustva podelim sa vama.
Baklava, poslastica turskog porekla, može da se sprema na više načina. Ukoliko želite da bude hrskava, slatka kao med, da vas osvoji na duže, preporučujem sledeći recept. Za ovaj recept treba vam 3 sata vremena i mnogo strpljenja. Ljubavi najviše, jer sve ovo treba i želeti da biste stigli do poslastice kojoj se svi dive.
Sarajevska baklava sa orasima po receptu Azre Lubure
Potrebno je:
1 kg oraha
1 kg tankih kora
više od 0,5 kg maslaca
Priprema:
Otopiti puter da cvrči i tako ga održavati sve do kraja na ringli. Složiti po 5 kora i svaku namazati puterom. Na petu koru koja je premazana puterom staviti orahe. Na vrhu se stave preostale samo 2 kore.Iseći prvo dijagonalno na rombove.
Zaliti baklavu preostalim vrelim puterom. Zagrejati rerunu na 200 stepeni, staviti 10 minuta baklavu da se peče, i nakon toga izvaditi baklavu i preliti puterom koji cvrči. Baklava treba da dobije zlatno žutu boju.
Nakon toga sledi 2 sata sušenja baklava na 100 stepeni.
Preliv šerbet
1.25 kg šećera
vode da prelije šećer
1 limun isečen na šnite
Kuvati šerbet sa svim navedenim sastojcima tako da bude tečan da sa kašike kaplje kap po kap, kao med. Limun ovde služi da spreči kristalizaciju šećera, te ga obavezno izvadite kada se šerbet prohladi. Voda se može dodati ukoliko šerbet bude pregust u toku kuvanja.
